Description

Crafted in tribute to Juan Carrau Sust, who pioneered artisanal méthode champenoise sparkling wines in South America in the 1930s, this Brut Nature carries forward nearly a century of family expertise. Grown in the red-sand hills of Cerro Chapeu, Rivera, Chardonnay and Pinot Noir grapes are harvested by hand, gently whole-cluster pressed, and fermented spontaneously at cool temperatures to preserve purity and finesse.

The wine undergoes its secondary fermentation in bottle with native yeasts, then rests 36 months on the lees in the estate’s underground cellar at 12 °C. The result is a fine-beaded, mineral-driven sparkling wine that balances richness with vibrant acidity and remarkable precision.

Tasting Notes:
Brilliant straw-gold color with delicate, persistent bubbles. Aromas of green apple, lemon peel, and toasted brioche lead to a dry, creamy palate with subtle autolytic depth and a clean, saline finish that mirrors Cerro Chapeu’s distinctive terroir.

Pairing: Ideal with oysters, sushi, soft cheeses, or festive toasts. Serve well-chilled at 6–8 °C.
